SOYA BHURJI from Uttar Pradesh

Ingredients
- 3/4 cup Soya granules
- 2 teaspoon Olive oil
- 1 teaspoon Cumin seeds
- 1 green chillies – Finely chopped
- 1 teaspoon ginger Finely chopped
- 1/4 cup onions Finely chopped
- 1/4 cup Chopped tomatoes chopped
- 1/2 teaspoon Turmeric powder
- 1/2 teaspoon Chilli powder
- 1/2 teaspoon Garam masala
- 1/4 teaspoon Salt to taste
- 1 tablespoon Finely chopped coriander – 1tbsp
Note - Soak soya granules in salted warm water to avoid bland tasting vegetable.
PROCEDURE:
- Heat the pan add oil
- Add jeera , ginger and chillies then add finely chopped onions let it pink for 2 mins add tomatoes
- Add all the spices.Salt, turmeric, garam masala n chilli powder
- Mix well for few mins then add soaked soya granules mix the vegetables in low flame low for 2 mins
- Add few drops of lemon juice (optional)
- Garnish with coriander leaves n serve hot with chapati or paratha
You can add capsicum, Red bell peppers or yellow peppers, for making it more colourful and delicious.!!
