Cold brinjal mix (eaten with bread)

This cold mix of Brinjal, loaded with nutrients is a treat to the taste buds. Is ready in a jiffy too!!


  1. Round brinjals, big- 1 kg
  2. Tomato- 2
  3. Onion- 2 big
  4. Green chilli- 3-4
  5. Coriander- 50 gm
  6. Black pepper- ½ tsp
  7. Salt- ½ tsp
  8. Olive oil- as you like


  1. Roast the brinjal on direct flame and remove the skin.
  2. Mash the brinjal.
  3. Finely chop onion, tomato, green chilli and coriander.
  4. Mix all ingredients in a bowl and add olive oil.
  5. Add salt and pepper to the mix.
  6. Refrigerate before consuming. Tastes best with bread!
